this is what i do:
i Start by cutting along the spine ( after removing fins ) and work your blade towards the belly, slowly sliding along the fillet as you cut, once the fillet is separated slowly stroke the flesh to see if any pin bones are present if so take some tweezers and pluck them out, done! fry and enjoy
source : used to be a professional poacher and could do a trout in 1 min with no bones,
just carried it onto the fish that i can eat and it works exactly the same no matter what fish except flatties but you just eat that like the meat is on a comb ( no pin bones ) easy!
